Joan Petersen from Hubbard Radio sent this recipe in for some Chicken Wild Rice Soup.Saute:
- 3 T. chopped onions
- 2 T. butter
- Add slowly while whisking:
- 1/4 cup flour4 cups chicken broth
- Cook until smooth
Add:
4 cups cooked wild rice
salt & pepper to taste
Simmer 5 minutes
Add:
1 can cream of celery soup
1 1/2 soup cans of milk
2 cups cooked diced chicken or turkey
Soup is more flavorful if refrigerated overnight prior to serving.
