Brainerd Eats: The Sign Is Up In Baxter, And This Chipotle Fans’ Mouth Is Watering

The teasing continues as Chipotle in Baxter continues to make strides to their inevitable opening…

I’m not sure I have made a u-turn as fast as I did when I saw the sign up today. Now, I’m certain I was maintaining the speed limit, had my hands at 10 and 2 and was being 100% attentive while racing toward the site in Baxter… but I honestly can not wait for the eatery to open. Yes, it’s another chain restaurant, sure they have gotten some bad press the last couple years, but we can be real with each other… Chipotle is delicious. Now, it’s not open yet, but patience will pay off.

My college years and early 20’s were fueled by their burritos. During that time I was living in St. Cloud and it was a staple for my girlfriend-turned fiance- now wife. I’d get done with my air shift at 6, grab Chipotle and go over to her apartment to watch some new talent show called American Idol. I’m talking the Ruuuuuuben Studdard, Fantasia, Carrie Underwood, Clay Aiken, Jordan Sparks, Chris Daughtry, Taylor Hicks days. Way back when indeed…

I like to say that I was eating Chipotle when people didn’t know how to pronounce it. There was a long stretch when there were legitimate arguments on how to pronounce the dang name! Chi-pole-tay, Chee-poat-lee, Chi-poat-lay. It got so bad the restaurant actually put the pronunciation on their bags!

All that is history now, it’s one of the most popular restaurant chains in America and as the old Cheer’s TV theme-song goes…everyone knows their name.

I think what I might be looking forward to the most is ordering on their App, driving over and heading in, grab my order and wave to everyone waiting in line.

Mmmm, I can’t wait for that Burrito Bowl with: extra white rice, no beans, barbacoa, corn salsa, half scoop hot salsa, sour cream and extra cheese please and the smile it will bring to my face.
